• The enrollments (Intronisations)
:
The feasts , called Cousinages take place 4 times a year,
on Saturday nights , in the 18th century Common Cellar (Caveau)
of Savigny les Beaune.
- In January, on the Saturday following Saint Vincent’s Day
- In March, for the Spring Goutaillon
- In June , for the Summer Goutaillon
- In November, on the night before the Vente des Hospices de Beaune

The guests are welcome by the Sonneurs de Trompes
de la Saint Hubert (horn blowers), who play all the appropriate
airs , “l’arrivée au rendez vous“
for example. Then, when they enter the Cellar they are offered the
verre de l’amitié , a welcoming glass symbolising
friendship. The band Les Joyeux Bourguignons animate the
night, singing drinking songs , telling bawdy stories and bawling
the traditional ban bourguignon (the Burgundy cheer). They
finish their performance with our Burgundy Marseillaise: “Joyeux
enfants de la Bourgogne”.
The enrollments take place during the meal, before cheese and dessert.
The Trompes de la Saint Hubert play “Les Honneurs”
and “Clocher de Dampierre”.

The ceremony starts with the call to the applicants whose qualities
and weaknesses are pointed out in a speech given by the Heurleurs
in front of the whole assembly. They then enter the family , promising
the Mayeur to observe Burgundian hospitality like Gentlemen
of heart:
" Bouteille sur table et cœur sur main"

Then they receive the blue and gold ribbon, the rallying
symbol of the Cousinerie.
After that, their oath is consacrated with a large sip of the blood of
their adopted land that the Bouteiller makes them swallow vigourously.
The new Cousins receive their diploma, the text of their induction speech
and they sign the Visitor’s Book. The ceremony finishes with a reminder
of the motto:
"Toujours gentilshommes sont Cousins".
(Gentlemen always remain Cousins).
The officiating exit is made while listening "Le Retour de Chasse"
or "Adieu Breton".
